Recipes, as Requested

Since Abby and Auntie K asked, here are the recipes for the puffy pancakes and the cake mix cookies.


PUFFY PANCAKES:
Preheat your oven to 425 degrees Farenheit. Put 1/4 cup of butter or margarine in a 9" x 13" casserole dish and place it in the oven to melt the butter.
Meanwhile, whisk together 3/4 cup white flour, 3/4 cup milk, and 3 eggs. Blend well. When the butter is melted, blend the mixture one more time, then pour directly into the casserole dish. Bake for 20 minutes.
The pancake can be served with syrup, jam, or butter and powdered sugar (our favorite!).

To increase the recipe, add 1/4 cup flour and milk for each egg.


CAKE MIX COOKIES:
Mix 1 egg, 1 melted stick of margarine (1/2 cup), and one box of cake mix. Roll into balls or drop onto cookie sheet 2" apart. Bake at 350 degrees Farenheit for 8 to 10 minutes.
